È un momento gastronomicamente felice per Venezia, città che ha faticato negli anni passati a raccontare di cucine brillanti e locali che non si rivelassero quasi sempre trappole per turisti. Ora l’imbarazzo della scelta è vivo e vivace di nuove proposte felici. Tra queste il bel locale di Giovanni Mozzato, ex rugbista ed ex uomo di finanza, convertito con gioia e competenza all’arte del ricevere e del bere bene.
Un’accoglienza di gusto quindi, in un ambiente raffinato, caldo e ristrutturato con grande sapienza tanto da essere riconosciuto tra i Locali Storici d’Italia. Qui i cuochi sono una squadra in tandem, composta dall’esperto Davide Scarpa e dal giovane (anche se non meno abile) Leonardo Bozzato, entrambi lagunari doc. Materie prime selezionate con grande cura, indifferentemente di terra e di mare, non necessariamente a chilometro zero ma certamente ottime, compongono i piatti di un menu ben strutturato. A partire dalle mazzancolle su lingua di vitello alla plancia con hummus di fagioli e maionese alla senape di Digione che fanno seguito a una divertente sequenza di amuse-bouche.
Goduriosi gli spaghettoni con sarde mantecate al burro di Normandia, lime candito e caviale d’aringa tra i primi. Succulento il petto d’anatra cotto a bassa temperatura su salsa teriyaki con bieta e prugne fermentate all’aceto. Un’irresistibile mousse al cioccolato può rappresentare la degna conclusione dolce. Carta dei vini di ottimo livello; alla carta conto sugli 80 euro.
